in a big bowl add the all-purpose wheat flour
add two pinches of sea salt
add the boiling water
mix it first with a spoon until it's combined
once it's start crumbling, start kneading with your hands until the dough is smooth
wrap it in a cling film and let it rest for an hour
dust you surface with flour
take a small lump of dough, squeeze it out and use a rolling pin to roll it out
make sure that the dough is thinner on the outside and a little bit thicker in the middle
dust with flour frequently so the dough doesn't get sticky
using a teaspoon fill in the dough
fold them in the middle, more or less like a taco, plead it three times on both sides and close it up. The shape has to be like a crescent moon
once all ready shaped place the dumplings in a bamboo steamer and transfer them on the wok with boiling water to steam for 10 minutes
