BBQ Rub
- 1 tbsp sea salt
- 1 tbsp Sichuan pepper corn ground
- 1 tbsp chipotle
- 1 tbsp paprika
- 1 tbsp garlic powder
- 1 tbsp cumin
take the pork belly and cut in relatively big cubes
in a big bowl place the pork belly and use the BBQ rub, then flip them around
position the rubbed pork belly cuts in a grill basket
place the grill basket in the bullet smoker running at 140℃-284℉
add a chunk of applewood in the bullet smoker and close the lid
let it cook until internal temperature reaches 73℃-163℉
place the pork belly at a pan so to render the fat
add the homemade BBQ sauce
wrap them up with aluminum foil and place the pan on the bullet smoker for 1 hour or until the meat is tender
ready to serve
