in a medium size pot with cold add 12 eggs
add 1 tbsp of vinegar for easy peeling
bring it to boil
once ready cover the pot with a lid and let it rest for 12 minutes
in a bowl with cold water add some ice cubes
add the boiled eggs in the ice water for 15 minutes
take the eggs out and peel them off
cut the eggs in half
pop out the yolks from the egg in a bowl
smash the yolks using a blender or a teaspoon
in the bowl add 2 tbsp of mayonnaise
add 1½ tbsp dijon mustard
add 1 tbsp of vinegar
add a pinch of salt and pepper
add 1 tbsp of olive oil
add 1 tbsp of sriracha or habanero hot sauce
mix it all in and leave it in the fridge to firm up
add the mix onto the eggs
ready to serve
