Chicken a'la Carmie
This is a recipe we have learned from our friend's in Miami and it's a winner every time. Pretty simple, fast and so, so tasty.

Breading
- Equal parts Panko breadcrumbs and grated Parmesan by volume
- 3 cloves garlic minced
- 1 pinch sea salt
- 2 pinches black pepper
Egg Wash
- 4 eggs
- 1 pinch black pepper
- AP flour
cut the chicken breast in fillet size
grate the parmesan using a micro-planner
mix the parmesan and the breadcrumbs together in a bowl
add the minced garlic
add the salt
add the black pepper
mix it until all ingredients are combined
Egg Wash
in a bowl crack open the eggs and give it a good whisk
add the salt
add the black pepper
in a flat baking tray add the cheese-breadcrumb mix
take the chicken breast and cover it with the AP flour
run it through the cheese-breadcrumb mix and then place it on the baking tray covered in baking paper
take the rest of the egg and sprinkle over the top of the chicken breasts for extra crunchiness, repeat the same with the cheese breadcrumbs
place the baking tray in a preheated oven at 200℃ - 392℉ for 25-30 minutes
ready to serve
