- New York strip steaks
- sea salt
Mushroom Sauce
- 500 g brown button mushrooms
- 3 tbsp olive oil
- 4 shallots diced
- 2 cloves garlic minced
- 250 ml red wine
- 2 tbsp soy sauce
- 700 ml broth, chicken or beef
- 300 ml cream
- 2 tbsp thyme
- 2 pinches black pepper
- sea salt to taste
Strip Steak Preparation
take a grate and place it inside a baking pan
add on the grate the steaks and coat them with salt on both sides
place the steaks, uncovered, in the fridge for 1 hour
Mushroom Sauce
remove the stems from the mushrooms
slice the mushrooms
in a shallow pot add the olive oil
add the diced shallots and let them caramelise over low heat
add the minced garlic
add the mushrooms and give it a good stir until they turn brown
add the wine to deglaze the pan and let the alcohol evaporate
add the soy sauce
add the broth of your choice and bring it to shimmer
add the heavy cream
add the thyme, black pepper and sea salt
cook it until the sauce thickens
