- sea salt and black pepper
take eight medium-sized potatoes and wash them thoroughly

take them straight into cold water and leave them there
don't rinse them, you want to leave the starch in
bring them to a boil until they are fully cooked
drain them and put them back on the stove and give them a little bit of heat so that you'll get rid of any excess water
give them a little bit of a stir it doesn't matter that you rough them up, that's actually what we want
when the potatoes have dried out, set them to a side
take a small pot add 2 tbsp of butter and get that melted
pour that over the potatoes to give them crust
add 2 pinches of salt
add a pinch of black pepper
Transfer the potatoes into an oven pan and spread them nicely
place them in the middle rack of your preheated oven running at 220 - 428 for 35 to 40 minutes
almost half an hour in the oven and they're starting to crispen up nicely
give them a little bit of a stir around here so we get them crisp also on the other sides
once cooked rest for 5 minutes
