Fenia's Potato Salad - with homemade Mayonnaise
Our friend Fenia makes a really fantastic potato salad, so we decided to give it a shot here and I'm telling you this is a great recipe. You should try it out.

Mayonnaise
- 300 ml / 1 cup  Sunflower oil
- 2 egg yolks
- 1 whole egg
- 1 pinch of salt
- 1/2 tbsp white vine vinegar
- Lemon juice
- 1/2 tsp dijon mustard
Vegetables and fruits
- 2 cucumbers cubed
- 1 Sweet apple cubed
- Deli ham or smoked turkey cubed
- 3 large carrots grated
- 1.5 kg / 3 lbs kg baby potatoes boiled and halved
- 250 g / 0.5 lbs  green peas
Sauce
- 1 tbsp Dijon mustard
- 2 tbsp Olive oil
- 2 tbsp white vine vinegar
- 1 pinch of salt
- Black pepper
- Mayonnaise
- 250 g / 0.5 lbs Greek yoghurt
Mayonnaise
- in a jar add 300 ml of sunflower oil 
- add 2 egg yolks, 1 whole egg and then a pinch of salt 
- add 1 tbsp of vinegar and a little squeeze of lemon juice 
- add ½ a tsp of Dijon mustard 
- start your immersion blender 
Vegetables and fruits
- In a big bowl cube up the cucumber and the apple 
- cube up and add the smoked turkey 
- grade the carrots on the coarse side of the box grater 
- boil the baby potatoes in heavily salted water then cool them down and cut them into bite-sized pieces 
- add 200 g of green peas and give it a little bit of a mix 
Sauce
- In a bowl add 1 tbsp Dijon mustard 
- add 2 tbsp of olive oil and the same with white wine vinegar 
- add a pinch of salt and freshly cracked black pepper 
- mix in well 
- add the Greek yogurt and mix all this together 
- pour the sauce over the salad and give it a mix 
- ready to serve
