Asian-Inspired Beef Stir Fry: Better Than Takeout

- 400 g trimmings from a a whole strip loin
- 1 broccoli
- 1 onion
- 1 clove garlic
Marinara
- 1 tbsp rice flour or cornstarch
- ½ tsp baking soda
- 2 tbsp rice vinegar
- 1 tbsp roasted sesame oil
- 2 tbsp soy sauce
- 1 pinch salt
- 1 pinch crushed citron peppercorn
Sauce Preparation
- 1 tbsp red miso
- 1 ½ tbsp sesame oil
- 2 tbsp oyster sauce
- 1 tbsp dark soy sauce
- 50 ml Chinese rice wine
- ½ tbsp dark soy vinegar
in a bowl with the meat trimmings add the rice flour
add the baking soda
add the rice vinegar
add the roasted sesame oil
add the soy sauce
add a pinch of salt
add a pinch of crushed citron peppercorn
massage the meat trimmings with the marinara so everything is well combined
place it in the fridge for half an hour
cut the broccoli in small chunks so you can stir fry later
cut the stem of the broccoli into thin slices
cut the ginger in thin slices
Sauce Preparation
add 1 tbsp of red miso
add 1 ½ tbsp of splash of sesame oil
2 tbsp of oyster sauce
add 1 tbsp of dark soy sauce
add a little bit of Chinese rice wine
add a little bit of dark soy vinegar
mix all this up
it's very important that you have everything ready because once you start cooking it will be finished in very short time
preheat your carbon steel wok and crank up the temperature so you get it screaming hot
add splash of peanut oil
add the meat and let it cook until it gets brown
remove the meat from the wok and place it in a bowl
warm up the wok again and add a splash of oil not too much
add the broccoli and the onion
let it stir fry
when is starting to brown up add all the ginger
add garlic but be careful, don't let it go too long
add a pinch of salt and citron peppercorn
stir around so everything is combined
add back the beef
add the sauce, always pour it around the edges that's important because that gives that evaporation on the hot side of the wok
let the sauce to cook off a little bit
ready to serve
