Classic Caesar Salad with Homemade Dressing & Croutons

- 4 cloves garlic
- 4 anchovies
- 50 g parmesan cheese
- 100 g soft butter
- juice of 1 lemon
- 2 egg yolks
- 2 tsp dijon mustard
break the garlic down and chop it finely
squeeze it down with your knife to become paste
take the anchovies and squeeze them down with your knife to become paste
mix them with the garlic paste
place them in a bowl and add the juice of 1 lemon
add 2 egg yolks
add 2 tsp dijon mustard
mix it well
while mixing start adding olive oil slowly until the sauce becomes relatively thick but not too thick
add black pepper
grade the parmesan cheese
mix it well
place it in the fridge
Croutons
in a bowl add the softened butter
add 2 cloves of minced garlic
add 2 tbsp of fresh chopped parsley and then with your spoon get it all mixed nicely
take your bread rolls and cut them down the middle
cut them into batons and with your spoon coat them with the mix on all sides
place them in the oven, middle rack 180℃/356℉ until they are golden brown
take the inside smaller leaves of a romaine lettuce and pile them up so to cut them into pieces
take the bread batons out of the oven and cut them into crouton size
take the salad put it in a bowl and drizzle some of the dressing around the edges
take a glove and carefully toss the salad so everything get coated evenly
in a plate add the salad, the croutons and flakes of parmesan
