Perfect Fava - Yellow split pea purée
One of our favorite Greek appetizers and YES it is a side dish

- 2 red onions chopped
- olive oil for frying
- 1 Clove of garlic
- 1 tbsp Thyem
- 150 ml - 5 fl oz extra virgin olive oil
- 600 g - 21 oz yellow split peas
- 1 L / 4.2 cups Chicken broth
- Salt & Pepper to taste
in a cold pan add olive oil
turn the heat on to medium low temperature
add the onions to caramelise them
create a spot in the middle of the pan and add the chopped garlic
add the dried thyme
add the 150 ml of extra virgin olive oil and mix that well
add the yellow split peas and fry them for 2 to 3 minutes
add the warm chicken broth and bring it to a boil
add sea salt and black pepper
cover the pot with the lid and let it shimmer for 50 minutes
once ready use the hand blender to blend it
ready to serve
