Homemade Mayonnaise & Aioli

- 2 egg yolks
- 1 whole egg
- 300 ml - 10 fl oz sunflower oil or other neutral vegetable oil
- ½ tbsp Dijon mustard
- 1 tbsp white wine vinegar
- 1 tbsp lemon juice
- a pinch of good sea salt
- 1 clove of garlic for Aioli
Mayonnaise
in a container that fits snugly around your immersion blender add the sunflower
add the egg yolks and the whole egg
add the dijon mustard
add the white wine vinegar
add the lemon juice
add the salt
use the immersion blender to blend the ingredients
