Homemade Mayonnaise & Aioli
So easy it almost feels illegal. Try to make this at home and impress your guests.The Aioli is PERFECT for dipping fresh baked bread, especially Ciabatta, yummy.

- 2 egg yolks
- 1 whole egg
- 300 ml - 10 fl oz sunflower oil or other neutral vegetable oil
- ½ tbsp Dijon mustard
- 1 tbsp white wine vinegar
- 1 tbsp lemon juice
- a pinch of good sea salt
- 1 clove of garlic for Aioli
Mayonnaise
- in a container that fits snugly around your immersion blender add the sunflower 
- add the egg yolks and the whole egg 
- add the dijon mustard 
- add the white wine vinegar 
- add the lemon juice 
- add the salt 
- use the immersion blender to blend the ingredients
