BBQ Pasta

This is one of our go-to staple recipes, combine smoked tomato sauce with leftover BBQ pork meat and you have a winner. You can cook up a super tasty dinner in no time just using leftovers and canned tomatoes, what's not to love.

Ingredients
  

  • 5 shallots minced
  • 2 tbsp olive oil
  • 3 cloves of garlic minced
  • ½ L smoked tomato sauce
  • 1.2 L chopped tomatoes
  • ½ kg pork belly burnt ends or pulled pork or whatever you prefer
  • 2 tbsp oregano
  • sea salt and black pepper to taste

Instructions
 

Sauce

  • in a pot add the olive oil
  • sauté the minced shallots until translucent
  • add the minced garlic
  • add the smoked tomato sauce
  • add the chopped tomatoes
  • bring it to shimmer
  • add the pork belly burnt ends and stir it
  • add 1 tbsp of sea salt
  • add ½ tbsp black pepper
  • add the oregano and stir it

Pasta

  • in a big pot filled with boiling salted water add the pasta
  • make sure to save some of the water once the pasta is ready
  • in a big hot pan add half the sauce
  • add some of the pasta water so the sauce sticks to the pasta
  • let it boil for a while
  • add the pasta in the pan and mix it all together
  • ready to serve
