Equipment

Ingredients
  

  • ½ kg ground beef

Avocado dressing

  • 1 avocado
  • Cilantro to taste
  • 1 lime juice
  • 1 clove of garlic
  • ½-1 tbsp cayenne pepper
  • Dash of buttermilk

BBQ rub

  • 1-⅕ tbsp sea salt
  • 2 tbsp paprika
  • 2 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tbsp black pepper
  • ½ tbsp ground cumin

BBQ Sauce

  • 250 ml ketchup
  • 1 tbsp worcester sauce
  • 2 tbsp apple cider vinegar
  • 3 tbsp BBQ rub
  • 3 tbsp honey
  • 1-2 tbsp mustard
  • 2-3 tbsp ketjap Manis

Instructions
 

Avocado dressing

  • take a ripe avocado and scoop that into the blender
  • add a quarter of cilantro
  • add the juice of one lime
  • add a clove of garlic
  • add a good pinch of black pepper and sea salt
  • add a tsp cayenne pepper
  • add a little bit of buttermilk and start the blender
  • If the consistency is not right add a little bit more milk
  • transfer it to a squeeze bottle and put it in the fridge

Tortillas into Taco Bowls

  • In a small bowl add 4 tbsp of olive oil, a pinch of salt and a quarter tsp of chipotle
  • take some medium sized wheat tortillas and brush them
  • and then put it in little shapers
  • transfer the tortillas to the oven running at 180℃-356℉
  • place them in the middle rack and let them bake for 10 minutes maximum
  • cut all the vegetables before you start with the taco meat
  • on the flat top running at medium high temperature drizzle some of avocado oil
  • place the beef on the flat top and break it up using your spatulas
  • add a drizzle of homemade barbecue rub and let it cook until it turns brown
  • on the other side of the flat top place the red and black beans and some sweet corn
  • add 2 tbsp of homemade barbecue sauce on the beans
  • add some lime juice on the meat and cover it with a lid while you finish off the beans
  • once the beans are ready transfer them in a bowl
  • uncover the meat, pile it in the middle of the flat top, add a little bit of beer place the lid on the meat and let it steam for 3 minutes

Serving

  • take a tortilla and add some salad in the bottom
  • add some of the nice taco meat
  • add little bit of cheese
  • add cilantro
  • add tomatoes
  • drizzle with the avocado dressing
  • ready to eat
