Ingredients
Ravasaki
- Feta cheese
- Puff pastry
- 2 eggs
Red Pepper Jam:
- 1 Kg/ 2 lbs Red Peppers choose variety depending on how spicy you want it
- 400 g/ 14 oz Sugar
- 2 Lemons juiced
- 250 ml/ 1 cup water
Instructions
Red Pepper Jam
- remove the seeds, cut the red peppers in relatively big chunks and place them in a pot
- add the sugar
- add the juice of the lemons and mix in until all combined
- cover with a lid and let it rest for 30 minutes
- add the water and start the stove on high temperature to bring it to a boil
- once it starts boiling reduce the heat to low and let it simmer for 30-40 minutes or until right consistency
- use the immersion blender to break it up a little bit
Ravasaki
- take a piece of puff pastry, place the feta cheese at the end and fold the top and the sides over the cheese, apply some egg-wash so the puff pastry sticks together
- place them in the freezer for 30 minutes
- use the deep frier to fry the puff pastry but first submerge half of the pastry and let them start to fry before you let go so not to stick to the bottom. Fry them until they turn golden
- once ready let them rest for 5 minutes
- ready to serve
