This Sicilian pizza, also known as grandma pie, is the perfect pizza to make in a regular home oven. Unlike Neapolitan pizza, which is difficult to reproduce without a wood-fired oven, Sicilian-style pizza delivers a thick, crispy, olive-oil-rich crust that works beautifully at home.

Ingredients
  

  • 1,200 g strong bread flour e.g., Super K with 17.2% protein
  • 780 ml water 65% hydration
  • 16 g dry yeast
  • ½ tbsp honey
  • 30 g sea salt
  • Olive oil for dough handling and pan
  • 100 g grated Parmesan or mix with Pecorino
  • Grated mozzarella or similar Greek cheese
  • Crushed tomatoes with basil olive oil, salt, and pepper (marinara sauce)
  • Thinly sliced fresh tomatoes
  • Italian air-dried salami sliced
  • Green horn peppers Florina peppers, thinly sliced
  • Fresh mushrooms thinly sliced

Instructions
 

Prepare the Yeast

  • Mix 16 g dry yeast with lukewarm water and ½ tbsp honey.
  • Let it sit until bubbly and foamy (proofed).

Prepare the Dough

  • In a large bowl, whisk 30 g sea salt into 1,200 g flour.
  • Gradually mix in the yeasted water using a spiral mixer or stand mixer.
  • Knead for 15–20 minutes, ensuring the dough does not overheat.
  • Once dough is tight and elastic, divide into 2 portions and shape into balls.
  • Lightly oil your hands, work surface, and bowls. Place dough in bowls, cover, and let rise 30–45 minutes until doubled.

First Shaping & Rest

  • Oil a baking dish generously (3–4 tbsp).
  • Transfer one dough ball to the dish and press/stretch it gently towards the edges.
  • Cover with foil and let rest 15–20 minutes to relax the gluten.

Final Shaping & Toppings

  • After resting, stretch dough fully towards the corners.
  • Spread a thin layer of marinara sauce.
  • Sprinkle with a thin layer of grated Parmesan.
  • Add grated mozzarella generously.
  • Layer thin slices of tomato, salami, green peppers, and mushrooms on top.

Baking

  • Preheat oven to maximum temperature (≈250°C / 500°F).
  • Bake pizza on the middle rack for 10–12 minutes until golden and bubbly.

Serve

  • Let pizza rest briefly to avoid burns.
  • Cut into squares—the corner pieces are the best!
