  • 1 cast iron Dutch oven

Ingredients
  

  • 1.2 kg Black Angus beef knuckle Femur and Wedge muscle
  • 3-4 carrots
  • 3-4 potatoes
  • 3-4 zucchinis
  • 1 large red onion
  • 2 cloves garlic
  • 3-4 tbsp avocado oil for searing
  • 250 ml red wine
  • ½ L beef broth
  • 400 ml passata
  • 1-2 tbsp sea salt
  • 1 tbsp red chilli flakes
  • 1 tbsp black pepper
  • 1 tbsp dried basil
  • 1-2 rinds of parmesan

Instructions
 

  • cut the beef knuckle in cubes
  • cut all the vegetables in thick pieces
  • in a large cast iron Dutch oven add the avocado oil
  • add the beef to get a good sear on it
  • once all beef is brown on all sides take them out
  • add avocado oil in the dutch oven
  • add all the vegetables until golden and take them out
  • repeat the same process with the onions until translucent
  • add the minced garlic
  • mix it all in
  • deglaze the pan with the red wine
  • once the alcohol evaporates add the beef broth and the passata
  • add a couple of tbsp of salt
  • add the chilli flakes
  • add the black pepper and the dried basil
  • bring it to shimmer
  • add the beef knuckle
  • add the vegetables
  • if necessary, add hot water to cover the meat and vegetables
  • add a stick of cinnamon and 2 rinds of parmesan
  • bring it to shimmer
  • place the cast iron pot in the oven for 1 hour at 160℃/320℉
  • rest for one hour
