Ingredients
- 2 cups mixed mushrooms white button, portobello, etc., washed and chopped
- 1 large white onion chopped
- 1 sheet store-bought puff pastry fresh or thawed if frozen
- 1 cup grated or cubed melting cheese Gruyère, cheddar, brie, etc.
- 2 tbsp oil for sautéing and greasing
- Salt & black pepper to taste
- 1 egg for egg wash
- Optional Black sesame seeds for garnish
Instructions
Sauté the Mushrooms & Onions
- Heat oil in a pan over medium-high heat.
- Add chopped mushrooms and cook until they release moisture and start to brown (about 5-7 minutes).
- Add a pinch of salt to help draw out excess water.
- Stir in chopped onions and cook until softened (another 5 minutes). Remove from heat.
Prepare the Oven Pot
- Lightly grease an oven-safe pot or baking dish with oil.
- Place the puff pastry sheet inside, pressing it gently against the bottom and sides (no need to be perfect—it will puff up nicely).
Assemble the Pie
- Spread the cooked mushroom and onion mixture evenly over the pastry.
- Season with black pepper.
- Sprinkle cheese on top (adjust amount to preference).
- Fold the excess pastry over the filling, tucking it in loosely.
Finish & Bake
- Poke a few holes in the pastry with a fork to prevent air pockets.
- Brush with beaten egg (egg wash) for a golden crust.
- Sprinkle black sesame seeds (optional) for extra flavor and presentation.
- Bake at 170-180°C / 340-355°F for 30-40 minutes, until golden and puffed.
Cool & Serve
- Let it rest for 10-15 minutes before slicing (this helps the filling set).
- Cut into portions and enjoy while warm!
