New York Strip Steak with Mushroom Sauce

Ingredients
- 4 New York strip steaks
- sea salt and black pepper to taste
Sauce
- ½ kg brown button mushrooms sliced
- 1-2 cloves of garlic minced
- 250 ml red wine
- 750 ml beef broth
- 1-2 tsp dijon mustard
- dash of W sauce
- 2 tbsp soy sauce
- 1 pinch of sea salt
- 1 tbsp tapioca starch + 2 tbsp water
Instructions
- season the steaks with salt and pepper and let them rest for 10-15 minutes
- slice the mushrooms
- the pan should be around 230℃
- add the clarified butter
- add the steaks only to get a good sear
- reduce the heat of the pan
- add the mushrooms and let them cook to release their water
- add the minced garlic
- add the red wine to deglaze the pan and let it until it releases the alcohol
- add the beef broth
- bring it up to boil
- add the mustard
- add a dash of w sauce
- add the soy sauce
- add a strong pinch of sea salt and mix that in
- in a small bowl add the tapioca starch, water and mix it all
- add it in the pan to thicken the sauce and let it shimmer
- add the stakes in the sauce
- let them cook until the stakes internal temperature reaches 51℃
