Tomahawk Steak Reverse Sear

There is something about big steaks, especially if they come with a handle! Tomahawks are just impressive and when done reversed seared like this - out of this world.

Ingredients
  

  • kg Tomahawk Steak
  • 2 brocoli
  • sea salt
  • freshly ground pepper

Instructions
 

Steaks

  • Fire up your pellet smoker with Hickory pellets at 110℃-230℉
  • Season the steaks thoroughly
  • Place them in the pellet smoker and insert a thermometer probe in the thickest part of the steak
  • Let the stakes smoke until core temperature reaches 52℃-125℉
  • Once ready cover them with aluminium foil to rest, until you prepare the side dish

Side Dish

  • In a big pot of heavily salted water at a roaring boiled point
  • Add florets of Broccoli just to blanch them, 3-4 minutes and take them out

Back to the Stakes

  • Pre heat your gas grill
  • Sear the steaks
  • Once the steaks are ready serve them with the broccoli on the side and green peppercorn sauce, link below
