Roasted Leg of Lamb - Greek Style
There are tons of ways you can roast a leg of lamb, today we are doing it the Greek way in a Dutch oven with lots of lemon and garlic. This is a fail proof recipe and turns out super juicy and tender every time.

- 2 legs of lamb
- 2-3 cloves garlic
- salt & pepper
- 2 kg baby potatoes halved
- ½ L chicken broth
- 300 ml extra virgin olive oil
- 250 ml water
- 4 lemons juiced
- 1 tbsp pepper
- 1 tbsp mustard powder
- 2 tbsp oregano
- 3 tbsp sea salt
- 2 cloves garlic minced
trim the excess fat from the lamb
take a bowl and cut the 2 cloves of garlic
in the bowl with the garlic add a little bit of olive oil, salt, pepper and mix it with a tea spoon
take a pointy knife and create some holes in the meat
place the some cut garlic in the holes you created
in the oven pot add some olive oil
cut the baby potatoes in half and place them in the Dutch oven
take the lamb and nestle them in the Dutch oven
Sauce
in a bowl add the chicken broth
add the extra virgin olive oil
add the juiced lemons
add the freshly ground pepper
add the mustard powder
add the oregano
add the sea salt
add the clove of minced garlic
mix it all in well with a whisk
pour the mixed sauce in the Dutch oven and make sure to cover the meat
place it in the oven, middle rack preheated at 200℃ - 392℉
cook it until internal temperature reaches 94℃ - 201℉
