Perfect Fava - Yellow split pea purée

One of our favorite Greek appetizers and YES it is a side dish

Ingredients
  

  • 2 red onions chopped
  • olive oil for frying
  • 1 Clove of garlic
  • 1 tbsp Thyem
  • 150 ml - 5 fl oz extra virgin olive oil
  • 600 g - 21 oz yellow split peas
  • 1 L / 4.2 cups Chicken broth
  • Salt & Pepper to taste

Instructions
 

  • in a cold pan add olive oil
  • turn the heat on to medium low temperature
  • add the onions to caramelise them
  • create a spot in the middle of the pan and add the chopped garlic
  • add the dried thyme
  • add the 150 ml of extra virgin olive oil and mix that well
  • add the yellow split peas and fry them for 2 to 3 minutes
  • add the warm chicken broth and bring it to a boil
  • add sea salt and black pepper
  • cover the pot with the lid and let it shimmer for 50 minutes
  • once ready use the hand blender to blend it
  • ready to serve
