Perfect Fava - Yellow split pea purée
One of our favorite Greek appetizers and YES it is a side dish

Ingredients
- 2 red onions chopped
- olive oil for frying
- 1 Clove of garlic
- 1 tbsp Thyem
- 150 ml - 5 fl oz extra virgin olive oil
- 600 g - 21 oz yellow split peas
- 1 L / 4.2 cups Chicken broth
- Salt & Pepper to taste
Instructions
- in a cold pan add olive oil
- turn the heat on to medium low temperature
- add the onions to caramelise them
- create a spot in the middle of the pan and add the chopped garlic
- add the dried thyme
- add the 150 ml of extra virgin olive oil and mix that well
- add the yellow split peas and fry them for 2 to 3 minutes
- add the warm chicken broth and bring it to a boil
- add sea salt and black pepper
- cover the pot with the lid and let it shimmer for 50 minutes
- once ready use the hand blender to blend it
- ready to serve
