Chicken a'la Carmie
This is a recipe we have learned from our friend's in Miami and it's a winner every time. Pretty simple, fast and so, so tasty.

Ingredients
- 1.5 kg chicken breast
Breading
- Equal parts Panko breadcrumbs and grated Parmesan by volume
- 3 cloves garlic minced
- 1 pinch sea salt
- 2 pinches black pepper
Egg Wash
- 4 eggs
- 1 pinch black pepper
- AP flour
Instructions
- cut the chicken breast in fillet size
- grate the parmesan using a micro-planner
- mix the parmesan and the breadcrumbs together in a bowl
- add the minced garlic
- add the salt
- add the black pepper
- mix it until all ingredients are combined
Egg Wash
- in a bowl crack open the eggs and give it a good whisk
- add the salt
- add the black pepper
- in a flat baking tray add the cheese-breadcrumb mix
- take the chicken breast and cover it with the AP flour
- run it through the cheese-breadcrumb mix and then place it on the baking tray covered in baking paper
- take the rest of the egg and sprinkle over the top of the chicken breasts for extra crunchiness, repeat the same with the cheese breadcrumbs
- place the baking tray in a preheated oven at 200℃ - 392℉ for 25-30 minutes
- ready to serve
