Roasted Leg of Lamb - Greek Style

There are tons of ways you can roast a leg of lamb, today we are doing it the Greek way in a Dutch oven with lots of lemon and garlic. This is a fail proof recipe and turns out super juicy and tender every time.

Equipment

  • 1 Dutch Oven

Ingredients
  

  • 2 legs of lamb
  • 2-3 cloves garlic
  • salt & pepper
  • 2 kg baby potatoes halved
  • ½ L chicken broth
  • 300 ml extra virgin olive oil
  • 250 ml water
  • 4 lemons juiced
  • 1 tbsp pepper
  • 1 tbsp mustard powder
  • 2 tbsp oregano
  • 3 tbsp sea salt
  • 2 cloves garlic minced

Instructions
 

  • trim the excess fat from the lamb
  • take a bowl and cut the 2 cloves of garlic
  • in the bowl with the garlic add a little bit of olive oil, salt, pepper and mix it with a tea spoon
  • take a pointy knife and create some holes in the meat
  • place the some cut garlic in the holes you created
  • in the oven pot add some olive oil
  • cut the baby potatoes in half and place them in the Dutch oven
  • take the lamb and nestle them in the Dutch oven

Sauce

  • in a bowl add the chicken broth
  • add the extra virgin olive oil
  • add the juiced lemons
  • add the freshly ground pepper
  • add the mustard powder
  • add the oregano
  • add the sea salt
  • add the clove of minced garlic
  • mix it all in well with a whisk
  • pour the mixed sauce in the Dutch oven and make sure to cover the meat
  • place it in the oven, middle rack preheated at 200℃ - 392℉
  • cook it until internal temperature reaches 94℃ - 201℉
