Ingredients
- 1 kg chicken thighs
- 2 tbsp avocado oil
- 1 tbsp sea salt
- 1 tbsp black pepper
- 1 tbsp paprika
- 1 white onion
- 3 cloves garlic
- 1 green bell pepper
- 1 red bell pepper
- 100 ml vermouth
- 0.5 kg cherry tomatoes
- 150 ml white wine
Instructions
Marinate
- cut the chicken thighs in 3 pieces and place them in a bowl
- add avocado oil
- add the sea salt
- add the freshly ground black pepper
- add the paprika
- use your hands to give it a good mix
Veggies
- cut the white onion in julienne style
- mince the garlic
- cut the green and red bell pepper down the sides
- split in half the cherry tomatoes
- cut the potatoes in wedges
Cooking
- take a big pan and place it on medium high temperature
- add avocado oil
- add the marinated chicken and cook it until it turns brown
- take all the chickens out and place it in a bowl
- add a little bit of avocado oil
- add the wedged potatoes and cook them until dark brown
- take the potatoes out and place them in a bowl
- add in the pan the white onion and keep the heat low
- once the onion is soften up nicely add the minced garlic
- add the vermouth and let it cook off
- add the green and red bell peppers
- add the chicken
- add the potatoes and mix it all in
- add the cherry tomatoes
- add black pepper, crashed coriander seeds, paprika and salt
- add a good amount of parsley
- add the white wine and mix it all well
- cover the pan with a lid and let it cook in low heat for 10 minutes
- ready to serve
