Quinoa Salad
Well, winter is upon us even here in Greece, so what better way to ignore reality than to make one of our favorite summer salads.

Ingredients
- 500 g boiled cold Quinoa
- 3 zucchinis grated
- 3 carrots grated
- 300 g crumbled Feta cheese
- 2-3 limes juiced
- 1 lemon juiced
- 3 tbsp extra virgin olive oil
- fresh basil
- salt and pepper to taste
Instructions
- take a big bowl and add the grated zucchinis, carrots
- add the boiled cold Quinoa
- add the feta cheese
- add 2-3 tbsp of olive oil
- add a pinch of salt and black pepper
- add the juice of the limes and lemon
- add the fresh basil
- strip it up and ready to serve
