Pork Stake Sous Vide

Ingredients
  

  • 3 Pork Stakes
  • sea salt
  • black pepper
  • oregano

Instructions
 

  • Use a pot of water with a sous-vide stick inside it
  • Set the water temperature at 58℃ / 136℉
  • Cut the pointy bones from the pork stakes
  • Brine the pork steaks using 1 L water and 2 tbsp rock salt
  • Season the pork stakes with black pepper and oregano
  • Place your pork stakes inside vacuum bags and seal them up
  • Place them inside the pre heated water and cook for 1 ½ hour
  • Remove the vacuum bags
  • Pre heat the gas grill at 230℃ / 450℉
  • Use a cast iron skillet to sear the pork steaks
  • Add 1 TB lard on the cast iron skillet
  • Once the lard is melted place the pork stakes facing fat cap down
  • Lie the steaks to sear on each side for a couple of minutes
  • Let the pork stakes rest for 2 minutes
  • Ready to serve
