Steamed Pork Dumplings

Very simple pork dumplings, but sooo delicious in their simplicity - just love them and they are actually not that hard to make, follow my steps and you will succeed.

Equipment

  • 1 Wok
  • 1 bamboo steamer

Ingredients
  

Dumpling skins

  • 300 g - 11 oz wheat flour all-purpose
  • 1 tbsp sea salt
  • 150 ml - 5 fl oz boiling water

Filling

  • 300 g / 11 oz minced pork
  • 3 tbsp spring onion diced
  • 2 tbsp ginger minced
  • 1 tbsp garlic minced
  • 1 tbsp sea salt
  • pinch of sea salt
  • freshly ground pepper

Sweet & Sour sauce

  • 120 ml - 4 fl oz rice vinegar
  • 50 g - 2 oz sugar
  • 1 tbsp ginger finely minced
  • 1 tbsp garlic minced
  • 2 tbsp sambal oelek

Instructions
 

Dough

  • in a big bowl add the all-purpose wheat flour
  • add two pinches of sea salt
  • add the boiling water
  • mix it first with a spoon until it's combined
  • once it's start crumbling, start kneading with your hands until the dough is smooth
  • wrap it in a cling film and let it rest for an hour
  • dust you surface with flour
  • take a small lump of dough, squeeze it out and use a rolling pin to roll it out
  • make sure that the dough is thinner on the outside and a little bit thicker in the middle
  • dust with flour frequently so the dough doesn't get sticky
  • using a teaspoon fill in the dough
  • fold them in the middle, more or less like a taco, plead it three times on both sides and close it up. The shape has to be like a crescent moon
  • once all ready shaped place the dumplings in a bamboo steamer and transfer them on the wok with boiling water to steam for 10 minutes

Filling

  • in a bowl add the minced pork and the diced spring onions
  • add the minced ginger
  • add the minced garlic
  • add a pinch of salt and black pepper
  • mix it up using your hands until you have a smooth paste
  • add a bit of soy sauce for some flavour

Sweet & Sour sauce

  • in a pot running in medium heat add the rice vinegar
  • ad the sugar
  • bring it to a boil for 5 minutes
  • transfer it to a bowl and add the finely minced ginger
  • add the minced garlic
  • add the sambal oelek and mix it up
