Picadillo Con Papas: A Hearty Mexican Dish

Ingredients
- 2 kg minced beef
- 3 medium sized onions
- 3 florino peppers
- 3 green peppers
- 3 cloves minced garlic
- 2 tbsp tomato paste
- 2 tbsp smoked paprika
- ½ tbsp cumin
- 300 ml beef stock
- 3 cans chopped tomatoes
- 1 tbsp freshly cracked black pepper
- 3 tbsp oregano
- 1 cinnamon stick
- 3 tbsp amarillo paste
- 4 potatoes cut in big cubes
- 300 g sweet corn
Instructions
- in preheated big pot add oil add the minced beef in batches
- break it and press it down, give it a pinch of salt
- take the minced beef out of the pot
- add oil and the onions until they start to get little bit translucent in the corners
- add the florino and green peppers until soften up
- add white wine or fortified white wine to boil up and lift up the fun
- when the peppers have started to soften up, clear a spot in the middle and add the minced garlic
- add 2 tbsp of tomato paste and let it fry a little bit
- add 2 tbsp of smoked paprika
- add 1/2 tbsp of cumin and let it toast a little bit
- mix them all together
- add 300 ml of beef stock
- add 3 cans of chopped tomatoes
- add 1 tbsp of freshly cracked black pepper
- add 3 tablespoons of oregano
- add 1 stick of cinnamon
- add the minced meat and steer all this in
- bring it to a simmer
- add 3 tbsp of amarillo paste
- add a 2 pinches of salt
- add the potatoes cut in big cubes
- cover it up with a lid and let it simmer for 50 minutes
- add the juice of 2 limes
- at the end add 300 g of sweet corn, steer them in and let them warm up don't cook them
- let it cool down for 15 to 20 minutes
- ready to serve
