Ingredients
- 2.5 kg Black Angus ribs
- sea salt
- black pepper
- 2 tbsp avocado oil
- 1 whole clove of garlic sliced in the middle
- 3 tbsp tomato paste
- ½ bottle red wine
- 900 ml beef broth
- 4 bay leaves
- fresh oregano
- a rind of parmesan
Side Dish
- 10 Shiitake Mushroom
- 12 thick slices of homemade pepper-bacon
- 1 tbsp sake
- 2 pinch of salt
- 100 ml soy sauce or ketchup manis
Instructions
Beef ribs preparation
- separate by cutting down in the middle between each rib
- season the ribs on all sides with sea salt and black pepper
Cooking the ribs
- place a large oven pot on the stove running at medium to high heat and add avocado oil
- add the ribs and sear them on all sides
- make some space in the pot and add the garlic
- add the tomato paste
- add the red wine until it evaporates
- add the beef broth
- add the bay leaves
- add the fresh oregano
- add the rind of parmesan and cover the oven pot with a lid
- transfer the pot in the middle rack of a pre heated oven running at 150℃ - 302℉ and let it cook for 3 hours
Side Dish
- remove the stems and slice the mushrooms in relatively thick size
- cut the homemade pepper-bacon in cubes
- in a cold pan running on low heat add the cubed pepper-bacon and let it render out
- once the bacon is ready add the mushrooms and stir occasionally until soften up
- add the sake
- add the salt
- add the soy sauce and let it cook for 2 minutes
- ready to serve
