Chicken a'la Carmie

This is a recipe we have learned from our friend's in Miami and it's a winner every time. Pretty simple, fast and so, so tasty.

Ingredients
  

  • 1.5 kg chicken breast

Breading

  • Equal parts Panko breadcrumbs and grated Parmesan by volume
  • 3 cloves garlic minced
  • 1 pinch sea salt
  • 2 pinches black pepper

Egg Wash

  • 4 eggs
  • 1 pinch black pepper
  • AP flour

Instructions
 

  • cut the chicken breast in fillet size
  • grate the parmesan using a micro-planner
  • mix the parmesan and the breadcrumbs together in a bowl
  • add the minced garlic
  • add the salt
  • add the black pepper
  • mix it until all ingredients are combined

Egg Wash

  • in a bowl crack open the eggs and give it a good whisk
  • add the salt
  • add the black pepper
  • in a flat baking tray add the cheese-breadcrumb mix
  • take the chicken breast and cover it with the AP flour
  • run it through the cheese-breadcrumb mix and then place it on the baking tray covered in baking paper
  • take the rest of the egg and sprinkle over the top of the chicken breasts for extra crunchiness, repeat the same with the cheese breadcrumbs
  • place the baking tray in a preheated oven at 200℃ - 392℉ for 25-30 minutes
  • ready to serve
