Yes it is a bit of a chore to make, but they are super tasty and quite impressive as a side for a dinner party of a backyard BBQ.

Ingredients
  

  • 6 eggs
  • 2 tsp dijon mustard
  • 1 tsp white vinegar
  • a pinch of salt
  • black pepper
  • 1 tbsp olive oil
  • 2 tsp sriracha
  • 1 tsp habanero hot sauce

Instructions
 

  • in a medium size pot with cold add 12 eggs
  • add 1 tbsp of vinegar for easy peeling
  • bring it to boil
  • once ready cover the pot with a lid and let it rest for 12 minutes
  • in a bowl with cold water add some ice cubes
  • add the boiled eggs in the ice water for 15 minutes
  • take the eggs out and peel them off
  • cut the eggs in half
  • pop out the yolks from the egg in a bowl
  • smash the yolks using a blender or a teaspoon
  • in the bowl add 2 tbsp of mayonnaise
  • add 1½ tbsp dijon mustard
  • add 1 tbsp of vinegar
  • add a pinch of salt and pepper
  • add 1 tbsp of olive oil
  • add 1 tbsp of sriracha or habanero hot sauce
  • mix it all in and leave it in the fridge to firm up
  • add the mix onto the eggs
  • ready to serve
