Homemade Mayonnaise & Aioli

So easy it almost feels illegal. Try to make this at home and impress your guests.The Aioli is PERFECT for dipping fresh baked bread, especially Ciabatta, yummy.

Ingredients
  

  • 2 egg yolks
  • 1 whole egg
  • 300 ml - 10 fl oz sunflower oil or other neutral vegetable oil
  • ½ tbsp Dijon mustard
  • 1 tbsp white wine vinegar
  • 1 tbsp lemon juice
  • a pinch of good sea salt
  • 1 clove of garlic for Aioli

Instructions
 

Mayonnaise

  • in a container that fits snugly around your immersion blender add the sunflower
  • add the egg yolks and the whole egg
  • add the dijon mustard
  • add the white wine vinegar
  • add the lemon juice
  • add the salt
  • use the immersion blender to blend the ingredients

Aioli

  • repeat the above steps and at the end add a clove of garlic
