Ingredients
  

  • 1 kg chicken thighs
  • 2 tbsp avocado oil
  • 1 tbsp sea salt
  • 1 tbsp black pepper
  • 1 tbsp paprika
  • 1 white onion
  • 3 cloves garlic
  • 1 green bell pepper
  • 1 red bell pepper
  • 100 ml vermouth
  • 0.5 kg cherry tomatoes
  • 150 ml white wine

Instructions
 

Marinate

  • cut the chicken thighs in 3 pieces and place them in a bowl
  • add avocado oil
  • add the sea salt
  • add the freshly ground black pepper
  • add the paprika
  • use your hands to give it a good mix

Veggies

  • cut the white onion in julienne style
  • mince the garlic
  • cut the green and red bell pepper down the sides
  • split in half the cherry tomatoes
  • cut the potatoes in wedges

Cooking

  • take a big pan and place it on medium high temperature
  • add avocado oil
  • add the marinated chicken and cook it until it turns brown
  • take all the chickens out and place it in a bowl
  • add a little bit of avocado oil
  • add the wedged potatoes and cook them until dark brown
  • take the potatoes out and place them in a bowl
  • add in the pan the white onion and keep the heat low
  • once the onion is soften up nicely add the minced garlic
  • add the vermouth and let it cook off
  • add the green and red bell peppers
  • add the chicken
  • add the potatoes and mix it all in
  • add the cherry tomatoes
  • add black pepper, crashed coriander seeds, paprika and salt
  • add a good amount of parsley
  • add the white wine and mix it all well
  • cover the pan with a lid and let it cook in low heat for 10 minutes
  • ready to serve
