Ingredients
  

BBQ Rub

  • 1 tbsp sea salt
  • 1 tbsp Sichuan pepper corn ground
  • 1 tbsp chipotle
  • 1 tbsp paprika
  • 1 tbsp garlic powder
  • 1 tbsp cumin

Instructions
 

  • take the pork belly and cut in relatively big cubes
  • in a big bowl place the pork belly and use the BBQ rub, then flip them around
  • position the rubbed pork belly cuts in a grill basket
  • place the grill basket in the bullet smoker running at 140℃-284℉
  • add a chunk of applewood in the bullet smoker and close the lid
  • let it cook until internal temperature reaches 73℃-163℉
  • place the pork belly at a pan so to render the fat
  • add the homemade BBQ sauce
  • wrap them up with aluminum foil and place the pan on the bullet smoker for 1 hour or until the meat is tender
  • ready to serve
