Pulled Pork Tacos with Guacamole and Pico de Gallo

We continue our Pulled Pork theme with two ways of doing tacos - super easy and great to serve for a crowd, they will be happy because pulled pork tacos are hard to beat.

Ingredients
  

Guacamole

  • 2 ripe avocados
  • 2 tbsp white onion finely chopped
  • 1 tbsp tomatoes finely chopped
  • 2 tbsp cilantro chopped
  • 1 clove garlic minced
  • 1 lime juiced
  • ½ tsp cayenne pepper
  • sea salt to taste

Pico de Gallo

  • 3 tomatoes chopped
  • 1 lime juiced
  • 1-2 tbsp onion chopped
  • 3 tbsp cilantro chopped
  • 1 jalapeño chopped
  • 2 tbsp olive oil
  • sea salt to taste

Instructions
 

Guacamole

  • in a bowl add the avocados and use a fork to smash it up
  • add the chopped tomato
  • add the chopped onion
  • add the chopped cilantro
  • add the minced garlic
  • add the juice of a lime
  • add the cayenne pepper
  • add the salt and mix it all up
  • let it rest for half hour

Pico de Gallo

  • in a bowl add the chopped tomatoes
  • add the juice of one lime
  • add the white onion
  • add the cilantro
  • add the finely chopped jalapeño
  • add salt and olive oil
  • stir it up
  • let it rest for half hour

Taco Time

  • using the flat top, on one side, add avocado oil
  • place the two tortillas on the flat top
  • add grated cheese to your preference
  • add some pulled pork
  • fold them over
  • let it cook until both sides are brown
  • in the middle of the flat top add some pulled pork to warm it up
  • on the other side of the flat top which is colder place two tortillas so to warm up slowly
  • take the tortillas with the cheese, open them up and add some white onion, cilantro
  • take the tortillas that was on the other side and add a little bit of guacamole
  • add a good chunk of pulled pork
  • add the pico de gallo and it's ready to serve
