Ingredients
- 2 white onions
- 6 shallots chopped finely
- 1 kg of Roma tomatoes or Pomodori
- 5 ripped avocados
- chopped cilantro
- pickled Jalapeno
- 10 limes
- sea salt
- olive oil
Instructions
Guacamole
- cut the avocados in half and take out the inside with the use of a table spoon
- smash them up with a fork
- in the bowl with the avocado add 3 tbsp of chopped tomatoes, 2 tbsp of chopped onion, 3 tsp of chopped cilantro and 3 tbsp of pickled Jalapeno
- mix all this up
- add lime and salt and a 1 tsp of Chipotle powder
- place it in the fridge with cling film
Pico de Gallo
- in a big bowl add the rest of the chopped tomato and 4 tbsp of chopped shallots
- add 3 tbsp of chopped cilantro
- add 2 tbsp of pickled jalapenos
- add the juice of 4 limes
- add 2 pinches of salt
- mix that up
- place it in the fridge
Salsa Verde
- in a foil pan add 2 chunked up white onions
- sprinkle a little bit of olive oil, place them in the oven under the broiler until they get charred
- add 10 fresh or canned tomatoes in the mixer
- add the roasted onions
- add the juice of 2 limes
- add 2 tsp of pickled jalapeƱos
- add a bunch of cilantro
- add pinch of salt, close the lid of the mixer and we give it a good long blitz
- place it in a bowl and then in the fridge to cool down
- ready to serve
